Anyone on here with any experience on 2-into-1 exhausts, or know of a shop that might? Specifically, I'm thinking about doing it to my CB200 (I here there might be some hp gain). Also, If you've heard any reasons as to why I shouldn't then I'd love feedback on that as well.

Generally, "opening up" the exhaust flow can improve HP IF it is accompanied by carb tuning. (which is an art) You would want to make sure the reduction down to one pipe is not restrictive. If you are running stock pipes (with baffles) now, going to one OPEN pipe could accomplish that. it will be louder but on a small bike not excessively so. Also wrapping the pipe may improve HP a bit. BUT my guess is that on a 200cc bike you won't see a huge improvement. I would suggest making the decision more on what you want for the look and sound of the bike. Do what you like and the grin will be worth more than the HP gain.

It's mainly for the aesthetics. 2-1 exhaust just looks cleaner to me.
